ENVISION

Happy Friday everyone!!!!

I am making an effort not to over-use exclamation points in my work emails, 
so I'll redistribute the extra ones here. ;)

I've mentioned previously that I've been in a bit of an inspiration rut, and also that I have some big surprises coming on the blog in mid-October.

In preparation for one of the surprises, I was going through all of my previous blog's posts. Yep, She is Moments is my third try at starting and sticking with a blog. It had been on my heart for a while, but 2013 was the first time I was able to stick with it, despite any bouts of non-inspiration.

While browsing through old posts that never made it, I found the below entry and really wanted to share it with you because it made me so excited and reinvigorated to share the upcoming surprises in October.

(p.s. look how scared I was to actually do this... I wouldn't even link...)

I am grateful to all of you who stop by to read my musings here, and I am very grateful to have this wonderful project to keep me thinking, feeling, reflecting, and loving life.


YOU'VE GOT TO START SOMEWHERE

Truth: I've started three blogs before this one.

Additional truth: None of them got more than one or two posts.

For me this is just one of those thoughts - START A BLOG - that just isn't going away. It just keeps screaming at me. I feel stuck because I know I need to suck it up and do it, but I'm pulled in so many different directions that I'm not quite sure where to begin.

I care about myriad things that I feel like I could write about:
  • Family
  • Food
  • Healthy eating
  • Maintaining healthy relationships
  • Exercise
  • Career advice
  • Staying grounded
  • Setting and achieving goals
But then I look at this list and think. That is bologna! I don't know anything about any of those things.

Here is what I do know. I know that I am blessed. I have my health and love and support and many opportunities (whether I want them or not). I know that I want to live a happy life in which I savor each moment and quit cramming so much into my days that I miss what I'm actually doing.

In high school I used to do my homework for one class in another class so I could study my lines for the school play in the first class. I was so over committed.

I am so over committed.

And I've liked that for my brief 26 years on this earth. But I'm starting to get tired and frazzled with running around like a maniac.

I am going to make a goal to write.Write it all down so I don't miss it. And hopefully slow down and reflect while I'm writing.

This summer is going to be a time of transition for me. I can just feel it in my bones. Better capture it, understand it, hash through it, and never forget that I'm living a beautiful life.

I was reading Mastin Kipp's blog The Daily Love (I am too scared to link to this yet because my blog is basically nonexistent and I don't want him finding and judging me.... don't you judge me for this right now!) and he said something that struck me. Made me gasp at my computer.

Let go of the outcome. Allow yourself to be pulled by grace.

It hasn't left me yet. It's even on my new and improved desk to remind me.

NO BAKE PEANUT BUTTER PIE

I do other things than make sweets, but lately, I've been a bit overwhelmed.
Baking helps. 
Also, I just love making treats to bring into work. 
Potluck, birthday, I don't care. I love it.

So, as I take time to plan all the blog surprises for October (yay birthday month!) here is an easy and delicious thing to make when you're feeling like being in your kitchen.


Are you ready for the easiest thing you will ever make? Ever?!

Well here it is.
Ignore the oatmeal. That was my breakfast the next day.
When you make things at 11:30pm sometimes your brain thinks about oatmeal.


(gluten-free if you leave out the crust)

Ingredients:
1 chocolate oreo pie crust
8 oz. cream cheese
1 c. peanut butter
½ c. granulated sugar
1 tsp. vanilla
8 oz. frozen Cool Whip, thawed
Two handfuls of chocolate chips

Directions:
Beat cream cheese and sugar until smooth. 
Add peanut butter and vanilla with beaters.
Using a spoon, fold in Cool Whip.
Glob it all into the pie crust.
Top with chocolate chips.
Lick the bowl. It's that good.
Refrigerate at least 4 hours. 
Store in fridge.






This was for a work potluck and two of my colleagues are gluten free... so I made them little PB Bites. :)

I seem to be in a bit of a rut these days.
Work is a bit too busy.
I am a bit too lazy.
And inspiration is a bit too far away.

Just part of the natural cycle of life.
I look forward to the upswing.
And in the mean time, will keep trying to get it all done.

This morning Katie and I went back to Kazaxe. I was very out of shape but it's such a fun atmosphere to dance and work out in... and for only $5 you can't beat it!

Then I spent some time figuring out all the yummy things I'm going to bake,

ruminating on the things that inspire me,

and drooling over the latest fall fashions to wear.

RASPBERRY CHOCOLATE CUPCAKES

These raspberry chocolate cupcakes are as good as they look.
The are SOOOOO good. 

My colleague had a birthday last Friday, and with all of our berry picking, I thought a raspberry cupcake might be yummy. Pair that with chocolate and my oh my.


You are in for a treat!

When my brother and I were little we used to go upstate NY to Keuka Lake every summer. When we would go berry picking with Mom, we would complain because Kevin only liked blueberries and I only liked raspberries. We could never agree on what to pick and were never happy while picking.

I find it so ironic now that I seek out activities like raspberry picking. If only I could live those simple times again, maybe I would appreciate them more. Also I like blueberries now, so I like to think I'd be less annoying.

Anyway, make these cupcakes, they are out of this world!



Raspberry Chocolate Cupcakes

Makes 24 cupcakes
(adapted from this yummy recipe)

Ingredients
1 box chocolate cake mix
3 eggs
1/2 cup coconut oil
3/4 cup heavy cream
1/2 cup sour cream
1 tsp. vanilla
1 1/3 cup fresh raspberries (can use frozen if thawed)
1 container chocolate icing

Directions
1. Preheat oven to 350 and put cupcake liners into pans
2. Stir together eggs, oil, sour cream, heavy cream, vanilla.
3. Add in cake mix and stir until completely mixed
4. Gently fold in raspberries
5. Fill liners 3/4 full and bake 15-20 minutes
6. Frost once cool
7. Eat at least two. :)

Last night I made chocolate raspberry cupcakes for a colleague's birthday. I think they may be the most delicious thing I've ever made. Ever.

My birthday is next month. I can bake things with fresh pumpkin. And I have exciting blog news to be announced on October 16th. I'd say it's going to be a good fall.

It's been a bit of a stressy week. Some work reasons. Some personal reasons. But I have missed blogging here. I wish that I could just blog for my job. 
Instead of sending all my silly work emails, I could send emails you to lovelies.

Well, life always looks prettier on the computer anyway doesn't it?

THE BABIES IN MY LIFE

Lillian, Hailey, Evan, Maddie, and Holly.
All under a year old and all 100% adorable.

Five on Friday this week is FIVE BABIES!!!!! Yes.

While I want lots of babies some day, right now I'm not at that stage in my life.
Well I may not be ready but it appears that many of my friends are.
SO I GET TO SNUGGLE THEIR BABIES. 

It's pretty much a perfect world.
