HUMPBACK ROCKS HIKE


There is no better way to start the morning that with an everything bagel, toasted twice, and smothered in cream cheese. The end.

A few weeks ago when Josh and I were in Charlottesville, VA, we took Mark's advice and headed out to hike up to the Humpback Rocks. While we love sitting around and watching movies, we also love hiking. Just to be outside and use your own body to climb a mountain is a miracle to me.

So after Josh surprised me with breakfast from Bodo's Bagels, we headed out.





After a brief but very helpful stop at the Blue Ridge Parkway Visitors Center at Humpback Rocks, we began our climb up the mountain. We don't look as hot or sweaty as we were. This was a quick but difficult hike and we should have brought more than one water bottle each. You need it!









We sat at the top of the mountain on the rocks for about half an hour and it was just stunning. The way up was hard but well worth it!

DAY AND NIGHT

Day two of intentional time is going well so far. I did hit the snooze button this morning (HOW DO I STOP DOING THAT?!) so I only had ten minutes. But ten minutes are way better than no minutes.

INTENTIONAL TIME

Lately I've been feeling extremely frazzled and scattered. I think the best word to use is unsettled.

This isn't surprising as in the past few weeks I've been traveling every weekend, left one job, and started another. I've left people, met people, moved desks, started a new commute, learned new systems, new names, new acronyms, new ways of communicating, and I haven’t left any time to check in with myself  and prioritize the things that keep me grounded.

I was reading Jess Lively’s blog last week and while it wasn't one thing she said in particular, I latched on to the idea of creating time in my day for specific intentions. Largely this is going to focus on being present and connected with myself.

I can be fairly efficient at multi-tasking. I’m not sure if this is a blessing or a curse.

I email and gchat and work on a deliverable and take a phone call and text all at the same time. I’m doing them but I’m not really present in any of them. Probably not the best way to handle my business – personal or professional!

So what would it look like if I had time where I was only doing one thing? The answer is I’m not sure. But I am hoping that it would make me feel less frazzled.

My intention around time going forward is to be present in it and not wish it away. I am also going to dedicate two times a day that I will attempt to spend time with/on/around/dedicated to myself.
What does this look like?

Each day I have to leave my apartment at 8am to drive to work. I leave the office at 5:30pm each evening.

So while I’m not left with much time. I’m thinking of parsing it out as follows: 7am wake up and have 20 minutes of me time. What a concept right? 20 minutes to read, have tea, sit by the window, wake up slowly, just be with myself and not be rushing. It sounds lovely. But the key here is that I’m really going to need to get up and not sleep through that time for meditation.

Then from 5:30-6:30pm each day I’m going to exercise. This cannot be that hard. I've been looking for gyms in the area or a yoga class or… and then I realized, there is a gym in my building. I like the elliptical. And that way, I don’t have to drive anywhere. Yes. Brilliant. The key there is going to be really pushing myself to actually go every day. Not my strong suit. But I’m going to try!

PEACHES AND WINE

There are a lot of wonderful things that happen in the summer. The sun is out longer, my favorite fruits are in season, and you have an excuse to drink wine outside. 
 
Just me? Ok fine. But it's heavenly, you should try it. 
  

When we were in Charlottesville, VA a few weekends ago, Josh and I had the pleasure of visiting Chiles Peach Orchard. We dodged a few thunderstorms, but were able to grab so many delicious peaches. It was so fun to wander the orchard!








 
After the peaches, we decided to mosey over to Veritas Vineyard for an afternoon wine tasting. It was very crowded in the tasting room but the wine was delicious. My favorite was the Sauvignon Blanc.
 




After the tasting we ordered a giant cheese plate (well, I forced Josh to eat it with me) and sat outside, reading and drinking and eating. Heaven.






I wish I was at that picnic table RIGHT NOW!!!!

CHOCOLATE OATMEAL BARS

Um yum!



These are not healthy. They are delicious. Enjoy!







CHOCOLATE OATMEAL BARS!!!! (original recipe)

INGREDIENTS:

  • 2 sticks butter that's soft
  • 2 cups light brown sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1/3 cup milk 
  • 2 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tbsp. ground cinnamon
  • 3 cups old-fashioned rolled oats
  • For the filling:
  • 1 (14 oz) can of sweetened condensed milk
  • 1/3 cup butter
  • 1 tsp. vanilla extract
  • 1 standard size bag of semi-sweet chocolate chips



INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Line baking pans with parchment paper. It's fine if it hangs over. s
  2. In a bowl, add flour, baking soda, salt, and cinnamon. Mix it up.
  3. Use an electric mixer to cream together butter and sugar for until light and fluffy. Then add in the eggs and vanilla extract and beat for 2 more minutes. Pour the milk in and beat until incorporated.
  4. Add in the dry ingredients a bit at a time beating them on low. Add the rolled oats with care.  
  5. In a pot over low heat add the filling ingredients. Stir as it melts and mix together. 
  6. Spread about 2/3 of the cookie mixture in the bottom of the baking pan. I obviously had to use two smaller pans since I didn't have a 9 x 13. I eyeballed it, but I thought there was too much oatmeal to chocolate. I'd use the 9 x 13 pan.  
  7. Then take the chocolate mixture and pour it over top of the cookie mixture. Take the remaining cookie mixture and drop it in small dough balls over the chocolate mixture. The balls can be spread out, but at least mash them down a bit. Mine didn't really spread evenly. 
  8. Bake for 25 minutes and cool overnight before cutting them up!








Yep. I put chocolate on my teeth to make them look like they are missing. As often as possible. It makes me so happy. Don't ask me why.
